Another restaurant opens quietly in El Segundo. Over the past few days Calo Kitchen and Tequila has opened its doors for dinner service. Starting today it will open for lunch and dinner.
According to owner Clemente Heredia, the restaurant will open at 11 a.m. and stay open until the last dinner guest leaves. Final seatings will take place at 10 p.m.
“I like to open things quietly,” said Heredia. “That way it give you a chance to work things out and properly train your staff and make sure everything is in order.”
A veteran of the restaurant industry, Heredia is slowly forging his way north into Los Angeles from Orange County. The latest venture sits in an all-new building in the same complex as Shake Shack and Randy’s Donuts.
“I have restaurants in Orange County,” he said. “I wanted to come up here and open something more modern.”
The sleek interior of Calo comes across very modern. There is a patio that will open this week as well. The facility boasts two levels which includes an elevator.
The menu comes across as modern Mexican. It features such things as Ribeye Tacos, Halibut Tacos along with Crispy Chicken Flautas.
As for the Tequila side, Calo will feature small-batch Tahona style mixtures. Tahona style uses a volcanic-stone wheel to crush the agave hearts. This produces a smoother and sweeter drink. This makes it ideal for sipping.
As Calo gets up and going, Heredia still has his eye on expanding north.
“I want to keep going out to L.A. for now,” he said. “It would be nice to open up in Santa Monica or Pasadena.”
Calo Kitchen and Tequila is located at 2191B Rosecrans, El Segundo.
